How to make Dhaba Style Maghaz Fry at home?

Maghaz Fry or Brain masala is one of the famous Pakistani Recipes. Where ever you go you will definitely find brain masala and biryani in Pakistani and Indian restaurants. Maghaz Fry is a very famous breakfast item in Pakistani Desi Cuisine, but you can also enjoy this delicious Maghaz fry masala in your special Ramadan Suhoor times.   • 4 Goat Brains (Mutton Brain) OR 1 Beef Brain (maghaz) 
  • Turmeric (Haldi) powder - 1/2 teaspoon 
  • Salt - 3/4 teaspoon 
  • Onion - 1 medium sized, sliced 
  • Cooking oil - 3 tablespoons 
  • Red Chili (Lal Mirch) powder - 1/2 teaspoon 
  • Garlic (Lehsan) paste - 1/2 teaspoon 
  • Ginger (Adrak) paste - 1/2 teaspoon 
  • Yogurt - 2 tablespoons 
  • Garam masala powder - 1/2 teaspoon 
  • Chopped fresh coriander (Dhaniya) leaves - 4 tablespoons, for garnish 
  • Ginger - Slices, for garnish 

Cooking Method:
  1. Step#01:  First, boil the brains with ½ tsp of salt and 1/8 tsp of Turmeric (Haldi) till it becomes firm. Drain, clean, de-vein and cut into coarse pieces.
  2. Step#02: In a pot take the oil and sauté the onion until light brown.
  3. Step#03: Add the remaining ¼ tsp. salt, chili powder, Turmeric (Haldi), Ginger (Adrak) paste, Garlic (Lehsan) paste and yogurt and mix well.
  4. Step#04: Add the Brain pieces, cover and cook on medium heat till well cooked and the oil comes on top.
  5. Step#05: Sprinkle garam masala powder.
  6. Step#06: Garnish with fresh chopped Coriander (Dhaniya) leaves and Ginger (Adrak) slices.
Enjoy with paratha or chapati!
