 Recipe NOTES and TIPS

~ First of all, you must check whether your yeast is active and fresh or not.

~ In order to make these doughnuts airy and fluffy, they have to be doubled in size by rising the dough naturally. So be patient with it. It might take more than the recommended hours. It all depends on the weather of your place or the temperature inside your kitchen.

~ If the dough is too difficult to handle, place it in the fridge for about 30 minutes before cutting them out. DO NOT add more flour.

~ Use warm milk to knead the dough (if you are using liquid milk instead of powdered milk)

~ Key factor here is the oil temperature at the time of frying, if too low then your donuts will be going to soak up too much oil, so make sure it is warm enough, about 360 degrees. It’s better to add doughnuts to slightly warmer-than-desired oil, the dough usually brings down the oil temperature a few degrees than to cool oil. (but not too much hot).

For best results get a reliable deep-fry thermometer, equipped with a clip that helps stick to the pot.

~ When doughnuts are fried, place them on a cookie rack so they can drain for a few minutes before placing them on a paper towel.
